I've been running an opteron 165 @ home for a while now with a couple of gigs of ram, and it's amazing. if you want to REALLY take advantage of dual monitors though, get some widescreens. i've been running 2 dell 20" widescreens @ work for a while now, and it's amazing the difference. the 20's are running around 250 right now, too... your boss is a schmuck.
